SERVES 4

2 teaspoons olive oil

2 leeks cleaned and chopped, white and light green parts only

1 pound cremini mushrooms, sliced

2½ cups reduced-sodium chicken broth

1 (14½-ounce) can fire-roasted diced tomatoes

¼ teaspoon salt

⅛ teaspoon black pepper

½ cup quick-cooking brown rice

1. Heat oil in large saucepan over medium-high heat. Add leeks and cook, stirring, until softened, about 5 minutes. Add mushrooms and cook, stirring, until tender, about 5 minutes.

2. Add broth, tomatoes, salt, and pepper; simmer 5 minutes. Stir in rice and cook until tender, about 10 minutes longer.
